Menu Plan Monday


Is it Monday already? This new week has come so quickly. It looks like a busy and fun week ahead.

On Monday night, the women's Bible study will meet here again. I am thinking about making a snack to share, along with some fresh pineapple that was on sale this week.

Tuesday night I get to attend a lecture with my husband on campus. In celebration of the 400th anniversary of the King James Bible, the University of Aberdeen is hosting a series of lectures. Alister McGrath from King’s College in London will be giving the introductory lecture.

Wednesday morning all the little kids are at our place for Play Group. One little boy is turning 3 so we might be having a little celebration. Joshua and Abigail will be so excited to help hang some balloons.

And on Thursday night we have a date night planned. Not sure what we are doing yet, but I'm always excited to spend time alone with Darren.

This week our AWF Bible study is starting up again. We will be studying the book of Hebrews! Very excited, but I feel like it has crept up on me. I am ill-prepared for a new week to start already.

Menu Plan Monday


Happy Valentine's Day! This morning for breakfast, we are going to enjoy these Strawberry Banana Crepes. And then we are going to a friend's house for a little party with the kids. My husband and I don't normally do much for Valentine's; we both have February birthdays and do all our celebrating for those special days.

I am very uninspired by my menu this week. We are just repeating the same dinners too many times. I think I am stuck in a rut. I am always hesitant to try new things. Why would I want to put all the work into trying a new dish when the odds seem low that the effort will result in a wonderful meal that everyone enjoys (or will even eat)? What is your strategy to introduce new recipes?

Recipe: Sausage and Bean Stew

This recipe has gone through years of tweaking. It was inspired by a recipe in my Better Homes and Gardens Cookbook,  but I no longer have that cookbook and just make this from memory. This is a crock pot (slow cooker) recipe. If you want to do it on the stove (hob), increase liquid by about a cup and simmer for 1 to 2 hours.
 
Sausage and Bean Stew
Makes 6 - 8 servings
  • 2 cups dry beans - a soft, light bean (Great Northern is my favorite, but I've also enjoyed Navy, Cannellini and Black-Eyed) OR substitute 2 cans of beans
  • 4 cups beef broth
  • 1 pound Italian (or other flavorful / spicy) sausage links, cut into 1/2-inch thick slices
  • 3 c. chopped white or cabbage, chopped into 1 inch squares.
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 t. dried oregano
  • 1 t. dried basil
  • 2 bay leaves
Directions:
  1. Rinse beans. Soak overnight. Simmer for 10 to 30 minutes minutes. Drain. (Follow to package directions)
  2. Place beans in crock pot. Add broth, herbs and tomatoes. Stir.
  3. Add remaining ingredients, vegetables first ending with raw sausage on top. Cook 6 to 8 hours on HIGH. Remove bay leaves. Serve hot.

Menu Plan Monday


This week, I tried my last time with the Pizza Crust and the Beef & Broccoli (Asian dish) recipes. We just did not enjoy them. I have tried tweaking the recipes, but I finally concluded that we need new one. Anyone have a pizza or Beef & Broccoli recipe they love?
