Honey Corn Bread

  • 1 cup flour (all-purpose)
  • 1 cup cornmeal
  • ¼ cup sugar (or golden syrup)
  • 1 tsp baking powder
  • 1 tsp baking soda
  • Dash of salt
  • 1 cup milk
  • ¼ cup butter or margarine, melted
  • ¼ cup honey
  • 2 eggs
  • 1 tsp vanilla extract
  1. In a bowl, combine dry ingredients (flour, cornmeal, sugar, baking powder, baking soda and salt).
  2. In a separate bowl combine remaining ingredients (milk, butter, honey, eggs and vanilla); stir into dry ingredients until just moistened. Don’t over stir.
  3. Pour into greased, 9 inch pan
  4. Bake at 425 F (220 C) for 15 to 20 minutes, until toothpick comes out clean. Serve warm.
